OK, I cheated. As every kid in playgroup knows, yellow plus red equals orange. Strangely, though, I never set out to make an orange meal. I didn’t cross my mind when I planned lunch yesterday. It just happened.

Having used the spice to flavour apple sauce last week, I thought I’d look for a savoury application of cinnamon. A search of food blogs and websites generated the predictable floods of dessert recipes, but eventually some savouries were located. On BBC Food I found a Chicken with Cinnamon & Lemon recipe by Katie & Giancarlo Caldesi that I didn’t really like the look of and a Cinnamon Poached Smoked Haddock with Fried Tomatoes recipe by James Martin that looked better, except I’d already demolished four smoked haddock fillets in the past couple of days.

The Roast Cinnamon Chicken with Lemon and Cider Vinegar Dressing by Kylie Kwong featuring Australian pepperberries caught my attention, but eventually I settled for Cinnamon Pineapple Pork by Peggy Trowbridge Filippone. Her first two ingredients decided it for me: “1 lb pork tenderloin, 1/2 tsp kosher salt”. I read it as “1 lb kosher pork tenderloin, 1/2 tsp salt”. After my serious tribute the other day to Jewish cooking in my family, the oxymoron “kosher pork” had me puzzled until I realised my mistake. I’ve subsequently learnt that the kosher salt I’ve seen in kitchens is not given this name because it’s kosher and other salt isn’t, but because this coarse-crystal salt is used to draw blood from meat (not pork of course!) during the process of kosher meat production, as well as in pickling and crusting.

The recipe is for medallions of pork, fried and then finished off in and served with a sauce made by sweating off a julienne of red capsicum, and then adding diced pineapple, crushed ginger, finely chopped jalapeño pepper, cinnamon and white wine and reducing down. I thought the flavour combinations sounded really interesting. Not having any jalapeños handy, I used a hotter Scotch bonnet pepper from my local greengrocer and halved the quantity. The other change I made was to increase the 1/8 tsp of ground cinnamon to a level teaspoon of freshly ground Sri Lankan cinnamon. I didn’t garnish with coriander as suggested, but instead made an accompaniment of bubble & squeak, made with Russian kale. I’m preparing a photo recipe in my recipes archive which should be available later tonight.

I expected - and got - a sauce that hit the palate with the sweetness of the pineapple, with the cinnamon and ginger following behind and the chilli coming through strongly at the end. Due to the high water content in pineapple, this sauce is succeptible to separating if reduced too much. Unfortunately, that’s exactly what happened to my sauce, as you can see from the photo. Unforgivable in a professional kitchen, but not really too much of a problem at home.

The sauce complemented the pork well and, according to dad, the leftovers complemented a leg of guinea fowl last night even better. By this time, he claimed, the distinct flavours of the sauce had begun to integrate. It beats me, but he thought the final product tasted quite like duck à l’orange.
